  8. Prepare of Green chile enchilada sauce.

Green Chile Cheesy Chicken Enchiladas step by step

  1. Boil chicken in large pot.
  2. Once chicken is cooked thoroughly, shred chicken (I use a fork).
  3. In large bowl mix all ingredients for the filling.
  4. In a non-stick skillet warm corn oil, then dip each tortilla front and back in the oil to soften. Once soften drain each tortilla on plate until there is no oil dripping.
  5. Add 2 tablespoons of filling on to each tortilla, then roll each tortilla and place in a baking dish.
  6. Add enchilada sauce and grated cheese and bake at 350°F for 25 minutes.
  7. Add any toppings you like and enjoy!.
