- You need of for the filling.
- You need of Boneless skinless chicken.
- You need of Chives and onion cream cheese.
- You need of Diced onion.
- It's of McCormick original taco seasoning.
- You need of for the enchiladas.
- It's of Corn tortillas.
- Prepare of Green chile enchilada sauce.
- Prepare of Grated cheddar cheese.
- You need of Corn oil.
Green Chile Cheesy Chicken Enchiladas step by step
- Boil chicken in large pot.
- Once chicken is cooked thoroughly, shred chicken (I use a fork).
- In large bowl mix all ingredients for the filling.
- In a non-stick skillet warm corn oil, then dip each tortilla front and back in the oil to soften. Once soften drain each tortilla on plate until there is no oil dripping.
- Add 2 tablespoons of filling on to each tortilla, then roll each tortilla and place in a baking dish.
- Add enchilada sauce and grated cheese and bake at 350°F for 25 minutes.
- Add any toppings you like and enjoy!.
